From mayo to mash, 5 ways to use saffron

This fragrant spice adds depth and a subtle sweetness to everything from truffles to tea.

Saffron is a spice that’s long been revered across the globe, captivating hearts and palates with its deep-red hue and complex flavour. Originating from the delicate stigma of the saffron crocus flower, it transforms the ordinary into the extraordinary, infusing dishes with a subtle, earthy sweetness and floral notes that dance on the palate. 

My own relationship with saffron began in childhood, when my grandmother would lovingly prepare me a special hot milk drink she’d created with the spice. I’ll never forget the feeling of privilege whenever she made it just for me — and, even then, I was struck by its remarkable colour and aroma.

At Farzi, we incorporate saffron into dishes such as our goat shawarma biryani, which comes with saffron rice, and shahi tukda, in which fried bread is soaked in sweet saffron-infused milk. It really has the power to transform flavours and it works with so many types of dish. 

1. Honey
Combine a pinch of saffron threads with warm honey and leave to infuse for a few hours. Drizzle over desserts, yoghurt, cocktails or even roasted veg.

2. Mayonnaise
Crush a pinch of saffron threads and brew them in a tablespoon of warm water. When cool, mix into mayonnaise with a dash of lemon juice. Pair with seafood and fries.

3. Chocolate truffles
Infuse a small amount of cream with saffron threads and use as you normally would to make truffles. Roll them in cocoa powder or crushed pistachios to finish.

4. Herbal tea
Enhance your favourite herbal tea by soaking saffron threads in hot water along with your tea leaves or herbs. You’ll be left with a fragrant and visually striking cup of tea.

5. Mashed potatoes
Add saffron to your potatoes as they boil before mashing. The spice imparts a lovely golden hue as well as a subtle flavour, creating a luxurious side dish.
